What do you do when you totally screw up a recipe for Vegan Richa's quinoa-mushroom veggie burger patties? Well, you turn lemons into lemonade...or in this case, burgers into pilaf!
After flipping the patties only to have them disintegrate all over the griddle, I decided instead of trying to mush 'em up to try again, I'd just give 'em a good fry on the skillet to give them a bit of crunch, and incorporated them into a bowl (or is it a salad if it's got greens as well? the verdict is out...). With less meat in my diet, it's given me a MUCH bigger selection of fruits, veggies, and legumes...so I can create filling meals with way less calories and way MORE nutrition!
This bowl is made up of a bed of spinach topped with a big ol' scoop of the 'pilaf' (quinoa, flaxseed, sauteed mushrooms & onions, fresh sage from the garden, breadcrumbs from an overly-crusty day-old loaf my husband snagged for free at work, and more), then surrounded with carrots, peas, garbanzo beans, edamame, red peppers, my husband's homemade zucchini pickles, blueberries, crumbled French feta and some peanuts for crunch. A wee bit of white wine vinegar splashed on top and...voila!
Insanely good. As you can see from my recent posts, this bowl/salad thing could become a very healthy addiction...
