Palestinian Knafeh, v 2.0



SUCCESS! After the first attempt was full of technical mishaps, the second attempt with a new recipe, for mini versions made using a muffin tin found while watching a video from the recipe’s author, was SOOOO delicious! While it didn’t get as brown on the outsides like the recipe's images, the taste was so totally there (and yep, we had no mental stamina to wait the full 3 hours it recommends for the syrup to be absorbed!


To make this new and improved version, I again used store-bought knafeh pastry from the Mediterranean grocer in the next county up, then this time used local Samish Bay Cheese's organic ricotta as the filler and a mixture of organic brown sugar & honey for the simple syrup that is poured over. We didn’t have pistachios on hand and couldn’t wait the full 3 hours for them to soak up the syrup, but let me tell you folks, these are something very, very special...
