Spinach, Feta & Pine Nut Fatayer

Today I made Lebanese Fatayer, i.e. spinach hand pies with feta, tomato, pine nuts, and a little sumac. These little ‘boats' were SO tasty and didn’t take a heck of a long time to make beyond the hour to let the dough rise, and were a perfect little vegetarian lunch for us to enjoy on this beautiful spring day. It was my first time making these so the shaping may have not been perfect, but I am looking forward to trying these again - and possibly with other ingredients as well - in the future!
