Mushroom Shawarma Wraps



Know how I just wrote about substitutions for meat in entrees? Here's yet another perfect example, this time using gorgeously marinated mushrooms in Greek spices instead of chicken, lamb or beef.


One of our favorite things to make for dinner are wraps...and my husband makes an INCREDIBLE homemade version. Similar to naan but with zero yeast, these taste so much better than storebought and by the time the shrooms are done marinating, these are rested and ready to roll out and cook up on the stovetop. Combining quartered crimini mushrooms with brown basmati rice, pickled red onions, greens and other veggies, along with some crumbled goat cheese and homemade tzatziki? Let's just say these were inhaled..
