Bresaola, one of the most beautiful cured meats we like to make, tastes like heaven. Originating in the Lombardy region of Italy, it's easily made with lean beef and unbelievable to watch it evolve as you cure it. One of the first meats my husband ever tried his hand at curing, it's still in our top five.
