Shrimp Orzo with Lemon, Feta & Basil



One of my all time classic recipes is back in our home, something I've been making since my single days that I absolutely ADORE! This is a quick combination of Northwest-caught bay shrimp, orzo, organic tomatoes and green onion, lemon juice, and my new favorite organic feta from Samish Bay Cheese, just a few miles from here. Whip it all together, add some basil (a nice chiffonade of fresh basil is my preference, but it's December and so the dried is acceptable if that's all you have on hand!), and bake it covered at 450 for 20 minutes and you have a lovely bowl of comfort food.


(For a heartier meal, add a chunk of homemade sourdough)
