Salmon cakes are one of my favorite quickie meals to make that pack a ton of flavor and nutrients. Wild Alaskan salmon mixed with veggies, panko, herbs, homemade mayo, mustard and duck egg then sauteed in olive oil, then drizzled with a wee bit of balsamic vinegar? Serve it on some fresh greens and you've got a beautifully light meal.
