I didn't roast my first whole chicken til I was in my 30s as I was too intimidated. Turned out it was nothin'! I laugh consider that I've since raised a ton of meat chooks, but you gotta start somewhere. My recommendation? Get thyself a whole organic pasture-raised chook (spend the money, it makes a difference both ethically and taste-wise), jam some fresh herbs into the skin as shown, brush some oil with salt & pepper on the outside, and roast it in the oven til it's beautiful.
