Preserving Strawberries


One of the most worthwhile things you can do in late spring is to buy as many flats of local organic strawberries as you can afford, snip off the tops and freeze them individually on cookie sheets, then pour them into jars and toss into the freezer. I swear, frozen berries are the number one reason we invested in an upright freezer, as there is nothing like pulling out a jar of fruit you froze last spring on a cold winter's day annd dream of the day the warm weather returns...
