Curing Meat: Pancetta


One of the prettiest cured meats to make is pancetta, which is NOT a synonym for bacon. Pancetta, like bresaola, is cured so you can eat it just like in the picture ... it does not need to be cooked (although it can be a delightful addition to some things, I will say). And see how it's rolled/twined? That makes it a great showcase piece for your charcuterie platter as well.
