Moroccan Chicken with Preserved Lemon

One of the absolutely most flavorful chicken recipes in my collection, this is made with an organic pastured chicken, broken down and marinated overnight in everything from saffron to turmeric to ginger to fresh cilantro and parsley, then roasted with onions on the stovetop, removing the chicken then letting the onions caramelize with some home-preserved meyer lemons and capers, thickening into a beautiful sauce before then pouring back onto the chicken and serving with some homemade flatbread. the kitchen smells...phenomenal!
