When I was a kid, I never liked hoppin' john, and so never gave it another thought since. For some reason last year I thought about my mantra of trying something again that I didn't like as a kid, and seeing if my opinions/tastes have changed. And in this case, boy have they ever!! I found a recipe online and the very last bit of black eyed peas in the grocery store on New Years Eve and whipped this up in a cast iron skillet with some of our homemade bacon, and...it was delightful!
