Never, ever cared for cauliflower as a girl or a young woman, but when I tasted roasted cauliflower with lemon creme fraiche at Firehouse in Portland fifteen or so years ago, I decided to give it another chance.
After that I learned a few tricks - one being the awesomeness of 'ricing' cauliflower in the food processor to make veggie fried 'rice', and it's usefulness as a fairly generic, yet healthy, base for other flavors as well. Our favorite? General Tso's Cauliflower, which - amen - tastes nothing like cauliflower and everything like comfort food! Seriously just chopping up the cauliflower, tossing it in a garlicky paprika slurry of flour and water, then tossing all that with some panko, popping it on a cookie sheet in the oven for a bit, making up a delicious tamari - rice vinegar - sweet chili sauce and cooking for a wee bit more. Makes a killer bowl with rice or noodles, and is a great source of fiber.
My only tip? Make sure you eat it with plenty of other foods - a massive bowl of cauliflower alone will, for many of y'all, cause rooms to be cleared as it definitely can be gas-inducing...
