My BBQ chicken, potato salad and greens plated for my Food Systems project in 2020. It showcased our homegrown, heirloom meat chooks butchered and homegrown potatoes w/ homegrown greens. It took a deep dive into every single ingredient, examining where each originated & what eco-improvements could be made. 2 biggest lessons? 1) Pesticides are more dangerous than transport miles. An organic mango from Mexico is better than a conventional one from the US. 2) Sunflower oil primarily comes from Ukraine!
