My husband brought home some freebies from work, his grocer who rather than sell the scratch 'n' dent to customers at a discount, will occasionally offer them up to staff. So his latest haul of cans of garbanzos (chickpeas) and coconut milk were totally welcome! Coincidentally, a few days later I noticed this recipe from Choosing Chia mentioned on CNN of all websites and when I clicked on it, boy was it indeed crazy easy to whip up (and we indeed had all the other ingredients in the fridge that it asked for). He loves curries (I subbed red curry paste instead of yellow, and some leftover chard & spinach for the kale it asked for), and this became a great lunch hour meal for him, along with a hunk of my homemade bread on the side. Easy-peasy!
