While my husband is a butcher by trade, it wasn't until we got out to the farm where we got to procure our very own pig for my husband to butcher. Nope, we didn't get to raise it as we'd just moved in, but I was with the Kune Kune when our neighbor shot it for us and my husband was thrilled to be able to cut it up on our island in the kitchen! Kune Kunes are VERY fat pigs - as you can see from this photo - so are EXCELLENT for lard. For prosciutto? Notsomuch.
