Amaranth: “Elena’s Rojo"

I love love LOVE growing amaranth!

While I've literally never harvested it, I have spent many moments admiring its beauty in the garden and even put it in vases. This Guatamalan heirloom was actually named after the indigenous farmer responsible for reviving it, isn't that awesome?

This one was planted by seed and while it took far longer than anticipated to germinate, once it got going? It got going good! Only thing? It's getting more afternoon shade than I could have anticipated against our back fence, thanks to...the friggin' Russian Mammoth sunflowers that I can't seem to say no to. They're supposed to be 4-5' or taller, these ones are just 3'.

But hey, they pretty.
